Clinical Nutrition Coordinator
Brooke Theodorakos, MS, RD, LD, brings more than 20 years of experience in healthcare and education to Logan University. She most recently served as the St. Charles County CAPS Healthcare Instructor, where she educated and mentored emerging healthcare professionals through innovative learning experiences, real‑world projects and coordinated job‑shadowing opportunities across the St. Charles and St. Louis regions.
Prior to her work with CAPS, Brooke served as a Registered Dietitian with the St. Louis Department of Veterans Affairs at the St. Charles County Outpatient Clinic. In this role, she specialized in outpatient nutrition counseling and home‑based primary care, proudly supporting the health and well‑being of our nation’s heroes. She also brings extensive experience in clinical placement coordination and has built strong, collaborative relationships with preceptors and healthcare partners throughout the region.
Brooke holds a Master of Science in Interdisciplinary Nutrition Studies from Purdue University and a Bachelor of Science in Dietetics from Southeast Missouri State University. She has also served as an adjunct nutrition instructor at DeVry University and is a St. Charles County Vision Leadership Recipient, Class of 2025.
