Cheryl Houston, PhD, RD

Dr. Cheryl Houston completed her undergraduate studies in nutrition at Cornell University, Ithaca, NY. She holds graduate degrees from St. Louis University Schools of Allied Health Professions (MS) and Public Health (PhD). Her doctoral degree is in health services research with a minor in behavioral science and health education. She is a registered and licensed dietitian, is a Fellow of the Academy of Nutrition and Dietetics (FAND), and holds certification in Family & Consumer Sciences (CFCS) and health education (CHES). Dr. Houston has more than three decades of experience in university settings working with undergraduate, graduate and doctoral students, as well as post docs at a variety of institutions including Washington University School of Medicine and School of Social Work, St. Louis University School of Public Health, Fontbonne University, Capella University and now Logan University’s College of Health Sciences. She has an extensive background in curriculum development and assessment and she received nominations for teaching excellence many times throughout her career.

Dr. Houston spent the early part of her career in behavioral science research at Washington University School of Medicine and was co-director for the Master of Health Science degree in Health Care Services (now Applied Health Behavior Research). Her passion for teaching and higher education administration led her to Fontbonne University where she served for 18 years.  Dr. Houston was a full professor in dietetics, a program director for both dietetics and health education, and for eight years she held the position as the department chairperson in the Department of Human Environmental Sciences (now Family & Consumer Sciences). She worked with the faculty to develop an undergraduate program in health education and a graduate program in multidisciplinary health communication studies with an option for students to complete a dietetic internship and sit for the registration exam for dietitians.

Dr. Cheryl Houston has 17 years of experience in accreditation as a lead reviewer for the Accreditation Council for Education in Nutrition and Dietetics (ACEND). In that time frame, she also served on the ACEND Board for three years, representing didactic programs in dietetics (DPDs). During her tenure at Fontbonne University, she successfully led the faculty through two program accreditations.
