Veggie Fajitas

Veggie Mix:
1 green bell pepper (sliced)
1 red bell pepper (sliced)
½ white or red onion (sliced)
1 cup sliced mushrooms (I like baby bellas!)
1 cup baby carrots (sliced in half long ways)
1 cup broccoli florets
1 cup cauliflower florets
Optional-1 fresh jalapeno (sliced)
Lime
Seasoning:
Store bought fajita seasoning or make your own!
Meal-makers: Use any of these or all of these to make your fajita meal!
Fajita-sized tortillas
Your favorite salsa
Shredded lettuce
Avocado
Sour cream
Black beans
Instructions
In a large skillet, add enough olive oil to lightly cover the bottom of the pan. Heat to medium/medium-high and add green and red peppers, carrots and cauliflower. Cook until they begin to get a little tender, then add the rest of the veggies. Cook until they are tender and a little crisp. Squeeze lime over the veggies and add seasoning. Turn off heat and continue to stir until the veggies are covered with seasoning. Serve warm veggies with all the extras to make it a delicious, but healthy meal!

This is a great alternative to restaurant-bought fajitas loaded with sour cream, cheese and oils. It's a delicious recipe packed with vegetables!
