Spaghetti Squash

Ingredients
1 Spaghetti Squash
2 T. Olive Oil
Salt, Pepper, Garlic to taste
Meat sauce
Parmesan Cheese as garnish

Instructions
Cut spaghetti squash in half, lengthwise. Scoop out seeds (these can be roasted, just like pumpkin seeds).

Drizzle each half with olive oil and season with salt, pepper & garlic

Place cut side down on a foil lined baking sheet

Bake at 400 degrees, 45 minutes – 1 hour, until flesh is tender. (It can also be prepared in the microwave)

Remove from oven. Pull a fork lengthwise across the flesh and it will fall into strands that resemble spaghetti. You can leave the strands in the shell and use as a serving bowl or transfer strands to a serving dish.

Ladle your favorite meat sauce on top of the spaghetti squash and garnish with parmesan cheese.

Nutritional Information:
Spaghetti Squash is a great alternative to carb laden pasta. One cup of spaghetti squash has 42 calories, less than 1 gram of fat and only 10 grams of carbohydrates. It is also a great source of fiber.
