Raw Almond Cinnamon Balls
Submitted by Dr. Josephine Lee
For those who shun refined sugar but still want to have something sweet to munch on during a energy slump in the afternoon. This is my solution.
10 Minutes to Prepare and Cook
Ingredients
-
Cinnamon, ground: 0.50 tsp
- Vanilla Extract: 0.25 tsp
- Dates: 0.50 cup, pitted, chopped
- Almonds: 1 cup, whole
- Water, bottle: 0.25 serving
- Raw Cacao nips or powder: 2 tbsp
- Goji Berrie: 0.50 oz
Directions
In a food processor, mix all ingredients EXCEPT THE WATER. Slowly add the water while blending the ingredients together until the ingredients are soft and sticky. If you add too much water, it will be too wet to stick together. Form the ingredients into balls with your hand (wet with water to make it less sticky to the ingredients) and then coat with cinnamon, shredded coconut or chocolate powder.
Number of Servings: 6
Benefits:
This is a crunchy treat that takes 10 minutes to prepare. Not only are these raw cinnamon balls delicious, but they will give you energy. They make a great snack in the afternoon when your blood sugar is plunging. The protein in the almonds, combined with the brain stimulating raw cacao and the blood balancing cinnamon will give you that needed lift.
