Better Than Chicken Soup

This immune-boosting soup is made with a virtual garden of powerful ingredients that contain beneficial nutrients for your immune system ... use as organic as possible!
Ingredients:
1 small yellow onion, chopped
4 cloves garlic, sliced
1 tbsp extra virgin olive oil
1 tsp ground turmeric
4-8 fresh shiitake mushrooms, sliced
4 cups mushroom, vegetable or chicken broth
1 1/2 cups julienned fresh kale
1 cup butternut squash, cut into 1/4' cubes
2 tbsp grated fresh ginger
1/4 tsp cayenne pepper (or more if desired - or less)
5-6 thin slices astragalus root (optional)
juice of 1 fresh lemon
1 tsp. miso paste
Directions:
In a sauce pot over medium-high heat, saute onion and garlic in oil 3 minutes. Add turmeric and mushrooms and saute 2 minutes. Add broth, kale, squash, ginger, cayenne and astragalus and bring to a boil. Reduce heat, cover and simmer 15 minutes. Remove from heat and let cool slightly. Add lemon and miso (adding miso when still very hot will diminish its probiotic benefits). Cover and let sit 5 minutes before serving.
Serves 4-6.
Nutrition Benefits:
This has tumeric for immunity and its beautiful yellow color (the first yellow dye for clothing). Kale, ginger, garlic, squash all for immune system and antioxidants and alkaline blood formation. Also cayenne for blood purification and astragalus root.
