Joy E. Short, Ph.D. R.D.

Joy ShortAdjunct Faculty - Online Instructor

Dr. Short holds a doctoral degree in educational studies and a Master of Science Degree in Nutrition, with a special emphasis in nutrition and physical performance, from Saint Louis University. She is a registered dietitian and completed her dietetic internship through Saint Louis University. Her Bachelor of Science is from Bradley University.

In addition to working as an outpatient dietitian in a hospital setting and a community dietitian in a health department, Dr. Short has both administrative and teaching experiences from several institutions of higher education. Her doctoral research was a cross-cultural investigation of the theory of multiple intelligences among dietetics students. Dr. Short served as co-principal investigator on Gardens to Tables, a U.S.D.A. Community Food Projects Competitive Grant. Her interests include nutrition education, promotion of sustainability, and wellness.
